I currently have my samsung phone as my modem and was wondering, if I send a sms or mms, would the cost be added to my mobile phone bill at the end of the month? or does this bypass my service provider?

It costs the same as if you sent the message via the phone keypad. (MMS might cost less, depending on how you send it. If it is sent over GPRS, you are sending it via the operator MMSC, and charged the same as if you sent from the phone keypad. If sent via direct delivery, one or two SMS are sent instead, and you would be charged as per SMS charges.)
